Stir-fry

Curry and Salted Egg Yolk Bitter Melon

Ingredients 

  • Bitter melon (Bitter gourd) ----------------- 300g 

  • Salted egg yolks -------------------------------- 5 units 

  • Minced garlic ------------------------------------ 100g 


Seasonings 

  • Curry paste --------------------------- 1 tbsp 

  • Potato starch (Cornstarch) ----------------- 200g 

COOKING STEPS

    Prepare all the ingredients. Slice the bitter melon into thin pieces and set aside.

    Steam the salted egg yolks until cooked, then mash them into a smooth paste.

    Heat oil to 180°C. Lightly and evenly coat the bitter melon slices with potato starch. Deep-fry them until they are golden brown and crispy (withered texture), then remove and drain.

    In the same pan (leave a small amount of oil), sauté the minced garlic and curry stir-fry paste until fragrant.

    Add the mashed salted egg yolks to the pan. Stir over medium heat until the mixture becomes foamy and bubbly.

    Add the fried bitter melon back into the pan and toss quickly to ensure every slice is evenly coated with the golden sauce. Garnish with chopped scallions before serving
