Lemon Curry Shrimp

Ingredients 

  • Prawns ------------------------- 300g 

  • Minced garlic ------------------- 1 tbsp 

  • Coriander (Cilantro) ------------- As needed 

  • Chili peppers ---------------------- To taste 


Seasonings 

  • Curry  paste ----------------- 2 tsp 

  • Lemon juice ----------------- 2 tbsp 

  • Rice wine -------------------- 1 tbsp 

  • Pepper salt ------------------ 1/4 tsp

    Prepare all the required ingredients as listed.

    Wash the black tiger prawns thoroughly and trim off the long whiskers (antennae).

    Heat an appropriate amount of oil in a wok or pan. Sauté the minced garlic until fragrant, then add the prawns.

    Stir-fry over high heat. Once the prawns begin to turn red, splash the rice wine around the edges of the pan to de-glaze and enhance the aroma.

    Quickly toss the prawns a few times, then add the curry stir-fry paste, lemon juice, and pepper salt. Continue tossing until the sauce reduces and coats the prawns evenly.

    Before serving, sprinkle with chopped coriander (cilantro). Serve with extra lemon wedges on the side—a fresh squeeze of lemon juice just before eating makes it even more delicious!
