Shallot Prawns

Ingredients

· Prawns -------------------------- 8–10 pieces
· Kombu seafood broth ---------- 200 ml
· Ginger -------------------------- 1 piece (minced)
· Garlic cloves -------------------- 3 cloves (minced)
· White part of scallion ---------- 1 stalk (minced)
 

Marinade

· Shallot sauce -------------------- 2 tablespoons
· Rice wine ------------------------ 2 tablespoons
· Soy sauce ------------------------ 1 tablespoon
· Oyster sauce --------------------- 1 tablespoon
· Rock sugar ----------------------- 1 tablespoon
· White vinegar -------------------- 1 tablespoon
· White pepper salt ---------------- a pinch

    Prepare all the necessary ingredients.

    Keep the shells on the prawns. Use kitchen scissors to trim off the feelers, then cut along the back to devein.

    Add oil to the pan, then pan-fry the prawns in shallow oil until they release their flavor and turn bright red and golden on the surface.

    Remove the prawns and leave the shrimp oil in the pan. Add the minced scallion, ginger, garlic, shallot sauce, and rock sugar, then stir-fry together until fragrant.

    Then, return the seared prawns to the pan and add the broth, rice wine, soy sauce, oyster sauce, vinegar, and white pepper salt to season.
