Chinese kale is in season in autumn. Its tender leaves and crisp stems pair perfectly with savory shacha beef.

Shacha Beef with Chinese Kale

Ingredients

  • 180g — Beef

  • 200g — Kale

  • 3g — Ginger, sliced

  • 5g — Garlic, minced

  • 1 piece — Chili, sliced

  • 20g — Green onion, chopped

Beef Marinade

  • 2 tsp — Barbecue sauce

  • 1 tsp — Soy sauce

  • 1 tsp — White sesame oil

  • 1 tsp — Oyster sauce

  • 1 tsp — Cornstarch

Seasoning

  • 1 tsp — Barbecue sauce

  • 2 tsp — Soy sauce

  • 1 tsp — Rice wine

  • 1 tsp — Cornstarch

COOKING STEPS

    Prepare all ingredients.

    Slice ginger and garlic. Cut green onion at an angle. Slice chili.

    Remove kale leaves and cut the stem in an angle and small sections. Slice the beef to set aside.

    Marinate the beef slices with marinating sauce for 15 minutes.

    Mix the barbecue sauce/ Shacha sauce well.

    Heat a pot of water, add some salt and oil, blanch the stem of kale for 1 minute. Blanch the kale leaf for another 1 minute before removing it.

    Sauté green onion, ginger, and garlic.

    Add chili flakes and beef to stir fry until done.

    Add kale to stir fry until well done. Add barbecue sauce/Shacha sauce to season.
