Silky Tofu Braised in a Numbing Sichuan Pepper and Spicy Chili Paste

Spicy Mala Tofu

Ingredients

  • Tofu------------------- 1 box 

  • Ground Pork---------- 150g

  • Chopped Scallions--- 20g

  • Minced Garlic--------10g

  • Fried Dough Sticks -- 1 piece

Seasonings 

  • Spicy Chili Paste---- 50g

  • Fine Sugar---------- 30g

  • Water---------------400ml

  • Soy Sauce----------10g

  • Cornstarch--------- As needed (for thickening slurry)

COOKING STEPS

    Dice the tofu into small cubes. Bring a pot of water to a boil with a pinch of salt, then blanch the tofu briefly. Drain and set aside for later use.

    Heat oil in a pan. Add the minced garlic and ground pork, then stir-fry until the pork is thoroughly cooked.

    Pour in water, spicy chili paste, and sugar. Add the tofu and simmer briefly until the sauce reduces. Sprinkle with chopped scallions, thicken with a starch slurry, and stir in soy sauce until well combined.

    Cut the fried dough sticks into bite-sized pieces and place them in a serving dish. Pour the mixture from Step 2 over the fried dough sticks and serve immediately.
