Ingredients

  • Boneless chicken thighs ----- 2 pieces

  • Garlic cloves ----------------- 10 cloves

  • Scallions  --------------------  2 stalks

  • Ginger slices -----------------  5 slices

  • Salt ---------------------------  a pinch

  • Dried chili peppers ---------- 1 cup


Sauce

  • Spicy chili paste ------------- 1.5 tablespoons

  • Soy sauce -------------------  1 tablespoon

  • Granulated sugar -----------  a pinch

  • Rice wine -------------------- 1/2 tablespoon

  • Black vinegar --------------- 1/2 tablespoon

    Prepare all necessary ingredients. Mince the garlic and chop the scallions (keeping the whites and greens separate). Season the boneless chicken thighs with a pinch of salt. Whisk the sauce ingredients together and set aside for later use.

    Heat the pan and place the chicken thighs skin-side down. Sear until the skin is golden and crispy. Add the garlic to the pan and fry alongside the chicken until aromatic and golden brown.

    Once the chicken skin is perfectly crispy, remove the thighs from the pan and dice them into bite-sized pieces. Return the chicken to the pan and continue to stir-fry until fully cooked through.

    Toss in the scallion whites and ginger, then add the dried chilies. Stir-fry quickly over medium-high heat until the spices release their fragrance.
