Spicy Sichuan Dan Dan Noodles

Ingredients

  • Noodles ----------------- 200g

  • Crushed peanuts -------- 10g

  • Chopped scallions ------- 10g

  • Fresh chili ---------------- 5g

  • Dried chili ---------------- 5g

  • Garlic -------------------- 15g

  • Western celery ----------- 10g

  • White sesame seeds ---- a pinch

  • Soft-boiled egg ---------- 1 piece


Seasonings

  • Spicy chili paste ------ 1 tablespoon

  • Sesame paste -------- 1 teaspoon

  • Black vinegar -------- 1 teaspoon

  • Rice wine ------------ 1 tablespoon

  • White pepper ------- to taste

  • Salt ------------------ a pinch

  • Caster sugar --------- a pinch

    Prepare all the required ingredients

    First, sauté the garlic, fresh chili, and dried chili together until fragrant.

    Add rice wine, black vinegar, white pepper, sesame paste, and water to the pan in order. Bring to a boil, then season with sugar and salt to taste. Set aside.

    In another pot, bring water to a boil and cook the noodles until they reach your desired level of doneness. Then transfer the noodles into the sauce from Step 4.
