A chilled, umami-rich Japanese noodle dish featuring crisp vegetables and a delicate kombu broth.

Kombu Vegetable Cold Soba

Ingredients 

  • Soba Noodles ------------ 100g

  • Tomato -------------------- 1/2 pc

  • Cucumber  ---------------- 1/2 pc

  • Carrot  --------------------- 1/4 pc

  • Okra  ----------------------- 2 pcs

  • White Sesame Seeds ------ A pinch

  • Boiled Egg) ----------------1 pc

  • Ice ------------------------- As needed

Seasoning

  • Kombu Vegetable Broth ---1 pack

  • Water ----------------------- 400cc

    Prepare all the ingredients.

    Mix the Kombu vegetable broth with 400cc of hot water. Let it cool to room temperature, then refrigerate until chilled.

    Blanch the carrots and okra, then remove and set aside.

    Cook the soba noodles until done, then rinse and soak in ice water to chill. Drain and set aside.
